A Rhubarby Week

Hi there,
It's been a very rhubarby week around here - although when it’s in season, it’s ALWAYS (a) rhubarb(y) week.
Rhubarb season is fleeting, so when it’s available, I want it in everything. Full confession: This week I really did put it in everything, from scones to galettes to muffins!
But the recipe I keep coming back to is this gluten free rhubarb crumb cake. Part coffee cake, part crumble, and full of tart jammy rhubarb, this humble beauty stars a tender crumb and a buttery streusel topping that makes it equally acceptable for breakfast or dessert.
Rhubarb - I’m all in, and I have no regrets. (But yes, I will be moving on to other bakes soon!)
